The sunny days of summer with their celebratory feel call for the perfect sparkling wine to match, and while many drinkers may turn to Champagne or Prosecco, those in the know are choosing Cava, the sparkling wine from Spain – and with good reason.

This well-balanced sparkling wine from the Catalonian region is the hot tip for those seeking a refined, highly versatile, food-friendly sparkling this summer and to celebrate, Campo Viejo are sharing their best food pairing tips and recipes with wine lovers everywhere.

Campo Viejo has been producing their sophisticated Gran Campo Viejo Cava Brut Reserva for more than 20 years with carefully selected parcels of Xarello, Parellada and Macabeo grapes from the Penedès area, aged as a Brut Reserva for 18 months.

Champagne appreciators may be surprised to note that in accordance with DO Cava  rules,  Campo  Viejo’s  elegant  Cava Brut  Reserva  is  made  with the  methode traditionelle, the same technique for Champagne creation and the most respected method for quality sparkling wine. As occurs in the production of Champagne, this is a longer process that sees the fermentation and transformation from still to sparkling wine occur entirely inside the bottle, unlike Prosecco and other sparkling iterations.

The result is a delightfully balanced tipple with powerful aromas of fruit and hints of yeast, whose versatile and food-friendly profile perfectly matches a range of dishes and cuisines including fish, shellfish, Mediterranean-style dishes such as paella, soft and hard cheeses and the renowned Iberian ham.

This structured sparkling wine also has some beautifully unexpected pairings that may surprise even the most astute of foodies, such as one of the most globally loved food trends of the past year – the humble fried chicken. Foodies will be excited to know that these Spanish bubbles are a perfect partner, as the acidity and crispness of Cava helps to cleanse palates of the fattiness of the chicken.

A glass of Gran Campo Viejo Cava Brut Reserva is also the ideal partner for some of the hottest food trends of 2018 including local produce such as asparagus and North African, Middle Eastern and the eternal favourite, Indian. The intense aromas of the 18-month aged Cava sits as an impressive equal partner to these spice-rich dishes and the slightly lower alcohol content will soften the heat, more so than it’s sparkling Italian and French counterparts.

Commenting on food pairing tips for the summer, Maria Huete, Campo Viejo Wine Ambassador elaborated saying, “Our delightful Cava Brut Reserva is the perfect pick for outdoor summer get togethers in the sunshine. This harmonious sparkling goes beautifully with the smoky flavours of barbecue-cooked vegetables like red peppers and garlicky mushrooms, grilled over an open flame. It’s also a great accompaniment to hummus, and tastes delicious on a hot day alongside lime or lemon sorbet, sweet strawberries, fresh pears or crispy apples,”

One of my party tricks is to serve a glass of Cava with a fluffy  ball of candy  floss  on top. When it breaks it just melts in with the cava to make wonderfully delicious bubbles. Another secret of mine is to serve with frozen fruits like berries – not only will it look and taste delightful, it also keeps your Cava cool,” continued Maria.

Elena Adell, Campo Viejo Chief Winemaker, shares her love for this bubbly Spanish sparkling saying, “At Campo Viejo, we are passionate about living a rich and exciting life and even more importantly, sharing this life and all its special moments with loved ones.”

We’re so proud of this delightful sparkling wine that not only perfectly encapsulates the vivacious moments that we love celebrating here in Spain but also all the food that we love to enjoy. Our hope is that lovers of good food will pop a bottle of our Cava and enjoy it as a worthy partner alongside all their favourite dishes this summer and beyond!”
