Chotto Matte opens its doors in landmark St Michael’s development

Following an extensive fit-out, Chotto Matte Manchester spans 20,000 sq ft across the 10th floor and is perched high above the city-centre, with the new location promising Japanese and Peruvian flavours, dramatic graffiti-inspired interiors, contemporary art installations and live music – set against the backdrop of Manchester’s skyline.

The restaurant group has worked with an array of local artists, including female contemporary artist Carla Raads, who was commissioned to transform the bathrooms – an iconic photo location across all Chotto Matte restaurants into a striking UV mural. Her work, centred on anthesis – the moment a flower reaches its fullest bloom has  translated this fleeting botanical phenomenon into an immersive, sensory experience painted in neon acrylics.

The standout feature of the venue is a spectacular 348-capacity rooftop terrace, open all year round, offering guests an elevated social and dining experience in one of the most sought-after spaces in the city. The vibrant terrace will feature an extensive bar, several areas of seating as well as a stage for live entertainment. A state-of-the-art DJ booth will also feature both in the main restaurant and on the terrace with a curated schedule of local DJ’s playing throughout the week.

In addition to the main restaurant, Chotto Matte Manchester will also debut an exclusive new concept, Claude’s – the brand’s Mexican-inspired Skyview Bar with an extensive mezcal & tequila offering. Claude’s Manchester will offer a vibrant atmosphere with an 82-cover dining space, a 250-strong collection of mezcals and tequilas, and a menu of Mexican nibbles. Highlights include Black Bean Tostadas, Crispy Baja Chicken and sharing dishes such as BBQ Brioche Salmon SlidersWagyu Beef Birria Sliders and Grilled Chicken Quesadillas – all designed to be enjoyed sharing style over drinks.

The venue will also feature two private dining rooms, one with exclusive access directly onto the rooftop, and a fully equipped meeting room. The bookable spaces have been designed to accommodate a range of configurations – perfect for intimate celebrations, corporate events and larger bespoke parties.

The Manchester menu has been crafted by Group Executive Chef, Jordan Sclare, alongside Founder, Kurt Zdesar and showcases Chotto Matte’s signature style – Nikkei cuisine; which blends Japanese precision with bold Peruvian flavours. Guests can expect dishes from five distinct cooking sections – sushi bar, tempura, robata, sautée and pastry – each representing a part of the Nikkei journey. 

Signature dishes include Yellowtail ‘Nikkei’ Sashimi, a vibrant selection of raw fish prepared with Peruvian zest, Seabass Ceviche, Nikkei Gyoza, Sato Maki Roll and the iconic Black Cod Aji Miso, a must try global bestseller. The menu also has an extensive robata offering featuring serves such as Pollo Peruano, a Whole Baby Chicken with coriander, canchas and pomegranate alongside a Asado De Tira – a slow-cooked braised beef short rib on the bone with purple potato puree, teriyaki jus and chives.

Desserts take centre stage with an in-house pastry team, offering indulgent creations such as a Baked Japanese Cheesecake, Salted Caramel Fondant and the signature Warm Cinnamon Churros.

The Manchester launch represents a significant milestone for Chotto Matte as it expands its footprint into the North of England for the very first time with its largest site globally. Chotto Matte currently operates in London, Toronto, San Francisco, Doha, and Riyadh with additional sites set to open in Georgia and Dubai in 2026, as part of the group’s continued global expansion.
