The Ivy Collection has officially opened the doors to its newly transformed rooftop destination at The Ivy Spinningfields Brasserie, Manchester, welcoming guests to experience a new era of rooftop dining and socialising in the heart of the city.

Designed as a destination for every occasion, the rooftop brings together a collection of distinctive spaces for dining, drinks and celebrations, offering everything from leisurely lunches and sunset cocktails to private events and late-night gatherings.

At the centre of the experience is a brand-new rooftop bar, where guests can enjoy a menu of signature cocktails inspired by the vibrant energy of Manchester. Serves include the Forbidden Margarita, made with Casamigos Blanco, Velho Cachaça, triple sec, lime, agave and jalapeños; the Cherry Blossom & Jasmine Spritz; and the Concrete Jungle Vesper, featuring Belvedere, Tanqueray No.10, lemongrass and Thai basil white vermouth.

Guests can discover reimagined interiors across the rooftop, inspired by Manchester’s industrial heritage. The new rooftop bar incorporates subtle worker bee motifs throughout its design, while The Ivy on the Roof restaurant features botanical influences, layered textures and elegant finishes, creating a sophisticated escape above the city.

Designed to be enjoyed throughout the seasons, the space also features a retractable roof, ensuring guests can enjoy the atmosphere of alfresco dining year-round, whatever the Manchester weather may bring.

The transformation also introduces an entirely new addition to The Ivy Spinningfields; The Peacock Room. Seating up to 28 guests, the private dining and events space has been designed to host everything from intimate dinners and celebrations to sophisticated late-night gatherings, complete with live DJ entertainment.

The official opening follows an exclusive launch celebration held on Thursday evening, at which Coronation Street star Antony Cotton and TikTok personality Luke Hamnett, were among the first guests to experience the new rooftop. Guests enjoyed Laurent-Perrier Cuvée Rosé, signature cocktails and live entertainment while exploring the transformed space ahead of its debut.

To celebrate the reopening of The Ivy on the Roof, guests at the launch event were treated to a selection of globally inspired dishes designed for sharing. Highlights included Scallops with spiced apple purée and white wafu dressing, Popcorn Shrimp with spicy creamy sauce, Yellowtail Ceviche with aji Amarillo pepper, and Beef Wagyu Tataki with soy, wasabi and crispy potato.
