Dahlia Stereo has been 2 years in the making and brings together three truly immersive concepts: Barbacoa Cósmica, an open fire grill kitchen inspired by Latin America and the southern states of America; Bar Más Bonita, a central Liquorita (liquor store) specialising in tequila, mezcal, rum and Latin spirits; and Dahlia Stereo, an intimate music first space built around a bespoke sound system, the first of its kind in the city, and will be open til 1am 5 nights a week. Quite simply no bar restaurant in the country has ever had this level of sound design and acoustic treatment — designed by musicians, sound engineers and DJs. Dahlia Stereo aims to set a new standard for the city, a sonically perfect bar and restaurant with real musicality at its heart. Programmed by Want Studios’ musical head honchos, Jonjo Williams (Maribou State) and Rich Reason (Hit & Run) who will bring world class programming to the Northern Quarter venue.
How to book: Bookings now live from Friday 11th September. Reservations are now live. The best way to enjoy Dahlia is to join them at the bar or food in the barbacoa. Booking is recommended to guarantee entry late night due to its intimate size, and there is a guest list available. Reservations are now open for food and drink from Friday 11th September. Open Wednesday to Sunday from 4pm or midday at weekends, with DJs an ever present feature in the Dahlia Stereo DJ booth.

The music controls the vibe with DJs on all day and all night — the line up for season 1 is of festival proportions. A world-class line up from Jamz Supanova to Dam Swindle is now online with more TBA soon. The special guests and best of the city will play on the System Sonida — a handmade bespoke sound system from the legendary Hatchet Sounds and Manchester’s own Neuron AV.
Latin influence continues into Bar Más Bonita, meaning “most beautiful bar”. Taking inspiration from the neighbourhood liquor stores found throughout Latin America, DAHLIA’s central Liquorita will specialise in tequila, mezcal, rum and other Latin spirits.
The drinks programme will be bold, vibrant and full of personality, but the difference here is that the team are making, batching and bottling their own creations including their own signature ‘Champagne Su-Paloma’ and Frozen remain unmistakably Manchester: independent, creative and built for a good time.
After 9pm, Dahlia Stereo will welcome some of the best selectors from Manchester and beyond. Gilles Peterson, Quantic, Gia Fu, DJ Die and Joey Thor are already confirmed to perform during September, Dahlia is part of the newly developed and soon to open The Hive, x+y’s new co-working building on Lever Street in the NQ.
Want Studios, co-founder Andy Windsor “We want to create the energy of an intimate club within a beautiful bar and restaurant. We are keeping capacity below 200 so the experience always feels personal, immersive and connected. Dahlia has been designed by the best DJs for the best DJs, but ultimately it has been lovingly made for everyone who truly loves music.
At the centre of Dahlia Stereo is a bespoke sound system handmade by the internationally renowned Hatchett Sound. The system and the venue’s acoustics have been technically designed by Jonny “Oppo” of Neuron Audio to deliver exceptional sound throughout both floors.
Jonny “Oppo” said: “We have been building and working with sound systems for years, but Manchester’s bars and restaurants have never had an installation at this level. Every detail of the room has been designed around how music should sound and feel. It is genuinely exciting for the city.”
